Tomato Rice - South Indian Style

 Hello Foodies, today I want to introduce a simple, quick and easy to make South Indian style flavorful variety rice perfect for Lunch box. Tomato Rice is a special type of spiced rice traditionally cooked in South India. There are many variations of Tomato Rice, mine is Completely South Indian Style !!  Tomato Rice is a simple and tasty rice based dish prepared with tomatoes, rice, onions, garlic and spices. Curd/yogurt, raita and Papad is a tasty and simple side dish for this easy tomato rice

Tomato Rice ~ It is a quick and easy lunch box recipe which can be simply prepared in a busy morning for tiffin box (for both kids and adults). Even a left over rice can be turned to a delicious meal with this simple tomato recipe. Both country variety tomatoes and Bangalore variety tomatoes can be used. Country variety tomatoes will be more juicy when compared to Bangalore variety while the flavor of latter will be more.  I prefer using Kashmiri red chilli powder as it will be less spicy and makes the dish more colorful. It can very well be replaced by normal red chilli powder. The addition of mint leaves and coriander leaves to this rice makes it more flavorful and tasty. INGREDIENTS :

2 tbsp. Ghee

2 tbsp. Oil

1/2 tbsp. Shah zeera (Persian Cumin)

2 Cloves

2 Cardamom

¼” Cinnamon Stick

1/4 Cup Onion Sliced

1 tbsp Ginger Garlic Paste

1/4 Cup Tomato Paste

1/2 Cup Tomato (Diced)

1(185) Cup Rice (cooked)

1 tbsp. Red Chilli Powder

1/2 tbsp. Garam Masala

1/2 tbsp. Coriander Powder

Salt (to taste)

Coriander leaves (a few)

PROCEDURE :

  • Firstly, in boiling water add 8 tomato and 10 dried red chilli.   
  • Boil for 5 minutes, or until the tomato softens and the skin separates.
  • Cool completely, and grind to a smooth puree. keep aside.
  • Heat oil in a pan and fry Shah Zeera. Cinnamon, and Cardamom for one minute. 
  • Add sliced onion and f point add Chilli Powder, Coriander Powder, Salt and Garam Masala and fry till oil floats on top. 
  • Add the diced Tomato and keep frying till the tomato softens to a pulp. Now add the cooked rice and toss with the help of a spatula on a high flame.
  • Once all the rice is coated nicely with the spices, sprinkle the coriander leaves on it and toss once more. This Pulav tastes very good with cold Onion or Kheer.
  • Finally, enjoy tomato rice with raita and papad.
