SPICY SPINACH ONION CURRY (Palakura Ulli Karam )

SPINACH is one of the leafy greens that is rich in nutrients. It is very good for health, especially for Eye Care. However, you may aware about Spinach Dal (Palakura Pappu) and Palakura Pulusu till now. But, try this "Palakura Ulli Karam". The taste will be amazing. When your relatives come home, serve this super special dish, they will eat it with great pleasure! Moreover.. even those who do not like Palakura will be tempted to eat it. So, how to prepare this tasty and healthy curry? Let's see the ingredients required for it now.

 

Required ingredients:

Spinach(Palakura) bundles - 4 (small size)

Oil - 3 tablespoons

Mustard - ½ teaspoon

Cumin seeds - ½ teaspoon

Peanuts - ½ teaspoon

Garlic paste - 1 teaspoon

Curry leaves - a little

Turmeric - 1/2 teaspoon


For the Onion kaaram:

Medium size onions - 3

Oil - 1 tablespoon

Peanuts - 1 teaspoon

Coriander seeds - 2 teaspoons

Cumin - 1 teaspoon

Chilli - 5 to 6

Tamarind - two slices

Salt - enough

Chili powder - 2 teaspoons


Preparation method:

For this, first wash the Spinach(Palakura) bundles under running tap water and cut it thinly. Cut off the thin stems and discard the fat ones.

Place the chopped Spinach (Palakura) in a bowl and set aside. Similarly, cut the onions (I do fine chop onions) required for the recipe and keep them ready.

Now put a pan on the stove and add oil. Once the oil is hot, add the chickpeas(Chana Dal), coriander(Dhaniya), Peanuts(Pallilu)
and cumin(Jeera) seeds and fry them until golden brown. Then
 add dried Red chilies and fry them. Then transfer the mixture into a mixie jar and keep it aside to cool.

Then, in the same oil, add the finely chopped onions, a little salt, and two slices of tamarind (Chinthapandu) and fry until the onions turn slightly golden in color. Then, turn off the stove and let the mixture cool down a little.

Now grind the coriander mixture taken in the mixer jar until it is a little coarse. Then add the fried onions, salt to taste and mix it vigorously so that the onions are not too soft and visible.

Then, put another pan on the stove and add oil. Once the oil is hot, add mustard seeds, cumin seeds, chickpeas, freshly crushed garlic paste, and curry leaves and fry them.

Once the tamarind is well cooked, add turmeric and mix well. Then add the finely chopped spinach and adjust the flame to medium to high and fry for 2 to 3 minutes while stirring.

After frying, the spinach will be nicely cooked and the mixture will thicken a bit. Then add the onion that you previously mixed and mix well to combine the entire mixture.

Then cover the pan and cook on low flame for 3 to 4 minutes. Then remove the lid and turn off the stove. That's it.. the very tasty "Palakura Ullikaram" is ready!
